Do you have a favorite variety of vegan cheese?

Thanks for your question, Jacqueline! I tend to use different brands of vegan cheese for different recipes because they all have their own distinct texture. For vegan mac and cheeese, you need to use a variety that melts really easily. I used Daiya cheese for this particular recipe. Chao vegan cheese slices are also great for mac and cheese. If you want to use Chao in this recipe, I recommend using creamy orginal in place of the cheddar and tomato cayenne in place of the pepper jack. Slightly different flavors, but still delicious! Hope this helps!
