A Bite Inspired by… Pi Day:
Pie is delicious, but it takes a while to make. This delicious Cherry Pie Ice Cream Sundae tastes exactly like cherry pie a la mode, but it’s ready in minutes. The tart cherry pie filling complements the creamy, sweet ice cream perfectly, while the graham crackers mimic the pie crust and add a nice crunch! It’s topped off with a decadent cinnamon whipped cream. Mmmmm… Now you can get your pie fix even faster! This recipe includes a vegan/dairy-free option too!

It’s Pi Day, Pi Day! Gotta get down on Pi Day! Yes, I know that reference is really awful and dated. I just couldn’t help myself. If you have no idea what I’m referring to here, do yourself a favor and don’t bother looking it up. You honestly don’t even want to know.
So, yeah, anyway it’s Pi Day! My favorite day of the year. Kind of. Sort of. Not really… But, hey! Who doesn’t love a day dedicated to celebrating math and all things pi related. Pizza pie, fruit pie, chocolate cream pie… Okay, now I’m just making myself hungry. Believe it or not, I actually am a fan of math. I took graduate level calculus in school, so that counts for something right?
So given that it’s Pi Day, you’re probably seeing recipes left and right for delicious, mouthwatering pies. But, you know me. I always have to be slightly different from everyone else. So, instead of a traditional pie recipe, I offer you my recipe for a Cherry Pie Ice Cream Sundae!
This recipe is the best way to celebrate Pi Day (or any day) because homemade pie is delicious, but it’s HARD. Like, seriously, baking a pie from scratch takes forever and I want to celebrate Pi Day NOW. So, here’s my take on pie for lazy people like me, who would rather celebrate Pi Day the right way aka by doing some awesome, hardcore math (yeah, right) than spend all day baking a pie. Pie hack. You’re welcome.
Plus, this recipe is ice cream. Who doesn’t love ice cream? This recipe is perfect for anytime you have a craving for cherry pie, but don’t have the patience to actually make one. This sundae really does taste exactly like cherry pie a la mode. The cherry pie filling is slightly tart complementing the sweet vanilla ice cream perfectly. The graham cracker crumbs mimic the crust and add a nice crunch to your sundae. But, the real winner of this dish is the cinnamon whipped cream. Because what’s pie (or ice cream, for that matter) without whipped cream? I added cinnamon to the whipped cream to give it an extra, yummy boost. And, there we go. The perfect pie sundae! The ideal treat for when your kids pass that math test they were dreading. Celebrate with ice cream!
I made mine with vegan ice cream and vegan whipped cream for a dairy-free version, but you can obviously use regular ice cream and whipped cream. It’s Pi Day—you do you! Enjoy this sundae anytime for a super easy dessert that reminds you of your favorite math-related holiday. Now you can experience the magic of Pi Day anytime of the year. Inspiring, right? ? Enjoy!
P.S. You can make this sundae with any fruit pie filling you want! Apple, blueberry… the sky’s the limit! It’s ice cream and pie filling, so you really can’t go wrong. ?
- 2 scoops of vanilla ice cream
- ¼ cup cherry pie filling
- 2 tablespoons graham cracker crumbs (made from about ½ a graham cracker)
- ¼ cup whipped cream
- 1 teaspoon cinnamon
- Mix whipped cream and cinnamon together in a small bowl until evenly combined.
- Scoop vanilla ice cream into a separate bowl. Top with cherry pie filling and then sprinkle with graham cracker crumbs.
- Top with cinnamon whipped cream. Enjoy immediately!

I missed Pi day, I was wondering why I kept seeing pies all over the internet. Duh.
I actually suck at Math. (I know right? I’m asian and I suck at math?) I used to get wierd looks all the time about getting D’s in it haha but its okay I can still enjoy Pi day right? Well maybe not because I missed it. -_-
