Healthy + Vegan Mint Chocolate Cookie Shake

Ingredients
  • 10-15 fresh mint leaves
  • 1 avocado
  • ¾ cup unsweetened vegan milk
  • 1 cup vegan vanilla ice cream
  • ½ cup baby spinach
  • 4 vegan chocolate cream-filled sandwich cookies, crushed
  • Extra mint leaves and cookies, for garnish (optional)
Instructions
  1. Add all ingredients into a blender. Blend on high until smooth.
  2. Pour into two glasses and garnish with cookies/mint leaves, if desired. Enjoy cold!
Notes
If you want this recipe to be nut-free, make sure your vegan milk and ice cream don't contain any nuts.

I used coconut milk and coconut vanilla ice cream for this recipe, but you can use soy, almond, etc. Whatever your preference is!
