Dessert "Fish and Chips"

Ingredients
  • For the "fish":
  • 1 bowl of white or yellow cake batter made from a standard (17 oz) store-bought package of cake mix (made according to package directions)
  • Cooking oil, for frying
  • For the "fries":
  • 4 apples, peeled and cut into wedges
  • 1 cup milk
  • ½ cup white sugar
  • 1 cup all-purpose flour
  • Cooking oil, for frying
  • For the sauces:
  • ¼ cup sour cherry jam
  • ¼ cup white chocolate chips
  • A few pieces of green candy (I used Watermelon Airheads), cut into small pieces
  • A few drops of neutral oil, such as safflower or canola oil
Instructions
  1. Make the "fish": Heat about 1.5 inches of cooking oil in a large, deep fry pan over medium-high heat until very hot and starting to sizzle.
  2. While the oil is heating, line a large plate with paper towels.
  3. Fill a large spoon with 2-3 tablespoons of the cake batter.
  4. Slowly drop the spoon of cake batter into the hot oil, moving your hand forward to create a narrow oval shape.
  5. Repeat steps 3 and 4 with the remaining cake batter. Make sure the cake pieces do not touch.
  6. Fry for 3-4 minutes, turning once, until golden brown on both sides.
  7. Carefully remove cake pieces to the paper towel lined plate.
  8. Make the "fries": Mix the milk and sugar together in a bowl.
  9. Spread the flour out onto a large plate.
  10. Dip each apple slice into the milk and sugar mixture and then coat well with the flour. Put aside on a plate.
  11. Heat about 1 inch of cooking oil in a large, deep fry pan over medium-high heat until very hot and starting to sizzle.
  12. While the oil is heating, line a large plate with paper towels.
  13. Carefully add each apple slice to the hot oil. Make sure the apple slices do not touch.
  14. Fry for 2-3 minutes until golden brown, turning once.
  15. Carefully remove apples to the paper towel lined plate.
  16. Make the sauces: Put white chocolate chips in a double boiler. Add a few drops of neutral oil.
  17. Melt the white chocolate and stir until smooth.
  18. Pour the white chocolate into a small bowl or condiment cup. Allow to cool for 1-2 minutes.
  19. Stir green candy bits into the white chocolate.
  20. Spoon the sour cherry jam into a separate small bowl or condiment cup.
  21. To assemble: Put "fish" and "fries" onto 4 plates. Serve condiments on the side for dipping. Enjoy!
Notes
Be sure to use a refined cooking oil suitable for deep-frying, such as safflower oil.
