Soft Cheese Crostini with Pickled Grapes and Rosemary

This beautiful spring appetizer is the perfect way to get your party on! It's delicious with a unique twist from quick pickled grapes-- a real crowd-pleaser! This recipe is also easily adaptable to different dietary restrictions, including gluten-free and vegan.
  • For the bread:
  • 1 baguette, cut in ¾-inch slices
  • ¼ cup olive oil
  • For the pickled grapes:
  • 1 cup red grapes, thinly sliced
  • ¼ cup white wine vinegar
  • 2 tablespoons white sugar
  • Salt
  • Other toppings:
  • 8 oz fresh soft cheese, such as brie or camembert
  • 3 tablespoons fresh rosemary, finely chopped
  1. Preheat the oven to 400 degrees.
  2. Brush each baguette slice lightly with olive oil, on both sides. Place in one layer on a baking sheet.
  3. Put baking sheet into the oven. Bake for 10-15 minutes until lightly toasted. Remove from oven and set aside to cool. The bread must be completely cool before you spread the cheese on it, so that the cheese won't melt.
  4. While the bread is cooling, make the pickled grapes. Mix vinegar, sugar, and a pinch of salt in a bowl. Stir until the sugar dissolves. Add the grapes and toss to coat. Allow to pickle for 10-15 minutes, stirring occasionally.
  5. Once the bread is cool, spread each slice with about 1 tablespoon of cheese. Add 4-5 slices of pickled grapes on each piece. Sprinkle with rosemary. Enjoy!
This recipe is easily adaptable to a variety of dietary needs, including vegan and gluten-free. Please see the bulleted list in the above post for instructions. Change the relevant ingredient portions accordingly, while keeping everything else the same. (i.e. if you want half the crostini to be vegan, then do 4 oz regular cheese and 4 oz vegan cheese; if you want ¼ of the crostini to be gluten-free, then do ¾ regular baguette and ¼ gluten-free baguette, etc)

These crostini taste amazing with a little drizzle of honey over the top! Feel free to add a little honey for an extra layer of flavor (just don't use it on the vegan version!)

The pickled grapes in this recipe are extremely versatile. Feel free to make extras to serve alongside simply grilled fish or chicken for an extra pop of flavor!
