Green Tea Cinnamon Syrup with Almonds

Serves: 8 (about 2 tablespoons a serving)
 
Ingredients
  • 1 cup of green tea, cooled (see notes)
  • 1 cinnamon stick
  • 2 cups of sugar
  • ½ cup roasted almonds, roughly chopped
  • ¼ teaspoon crushed red pepper, or to taste
Instructions
  1. Pour green tea into a small saucepan. Add the cinnamon stick.
  2. Heat to a slow boil on medium high. As soon as it starts to boil, reduce to low.
  3. Steep on low for 25 minutes. Remove from heat and take out the cinnamon stick with a slotted spoon.
  4. Put the pot with the tea back on the stove and heat on medium-high until just boiling.
  5. Reduce heat to low and stir in sugar. Be sure the mixture is no longer boiling, so the sugar won't burn.
  6. Stir mixture well until sugar is completely dissolved. Remove from heat.
  7. Add almonds and crushed red pepper. Serve immediately
Notes
To brew the tea, use 1 cup of hot water and 1-2 tea bags depending on how strong of a tea flavor you want. It should be at least moderately strong, so the flavor can come through. Steep for 4-6 minutes. Remove tea bags and let cool for 5-10 minutes.

This syrup will keep for several days, covered, in the refrigerator. Before serving, stir well with a spoon and warm it up in the microwave. It can also be served cold, but it’s best warm!
