Apple, White Cheddar, and Rosemary Bagels

Ingredients
  • 2 plain bagels, sliced in half
  • 1 green apple, sliced into 8 rounds
  • 4 thick slices of white cheddar cheese
  • ¼ cup pepper jelly (see note)
  • 1 tablespoon fresh rosemary, finely chopped
Instructions
  1. Preheat the oven to 375 degrees.
  2. Spread pepper jelly on the bagels—about 1 tablespoon per bagel half.
  3. Place one slice of white cheddar cheese on top of each bagel half and then top with two apple slices.
  4. Place bagels on a baking sheet and place in the pre-heated oven.
  5. Bake for 8-10 minutes or until cheese is bubbling and begins to brown.
  6. Sprinkle each bagel half with a little bit of the fresh rosemary.
  7. Serve immediately.
Notes
If you can’t eat dairy, feel free to substitute non-dairy cheese in this dish. I’ve tried it myself and it’s just as delicious! Try about a ⅓ cup of non-dairy mozzarella or cheddar on each bagel half.

You may need a little more or a little less pepper jelly than the recipe calls for depending on how big your bagels are. You should have enough to cover each bagel half completely with a thin layer of pepper jelly.
