Pour sparkling water into a pitcher. Add the ginger and the lime.
Cover well with plastic wrap making sure that no air can get in. Place in the refrigerator for an hour.
Remove from fridge and carefully take out just the lime slices with a spoon, leaving the ginger (ginger takes a bit longer to infuse its flavors than lime). Cover again and return to fridge for another hour.
Remove from fridge. Add vanilla. Garnish with extra lime slices, if desired. Enjoy!
Notes
Try to use an organic lime for this recipe, if possible. Since you’ll be infusing the whole lime into the drink, it’s better if there’s no pesticides on the skin.
You can remove the ginger for serving or leave it in for a stronger ginger flavor.
Make sure you cover the drink TIGHTLY with plastic wrap, while it’s in the fridge. Use multiple pieces of plastic wrap, if you need to. You don’t want the drink to go flat.
