So, guys. I have a confession to make to you all. I’m obsessed with the movie “Trolls”. Yup, that cartoon about the colorful, happy trolls who sing and dance. I saw the movie when it hit theaters back in November and have been “Trolls” crazy ever since. I listen to the soundtrack in my car almost everyday. Seriously, though. If you haven’t listened to this soundtrack before, YOU MUST! It is SO SO good. There’s no way you can watch this movie or listen to the soundtrack and not be happy. It’s just so fun and upbeat.
The movie is basically about this pink, happy-go-lucky troll named Poppy who goes on a magical adventure to save the other trolls from these scary monsters called Bergens. The perpetually depressed Bergens like eating the trolls because it gives them a temporary burst of happiness. As you can probably guess, by the end of the movie they figure out, with Poppy’s help, that happiness is already inside all of them and they can access it with the help of friends aka happiness does NOT come from eating trolls. Everyone rejoices and the movie ends with a cheery, peppy dance track from none other than Justin Timberlake. I’m not even making this up—it’s a real thing.
As you can see from the pictures, I also own a Poppy doll. Yes, I am a full-grown adult with no kids of my own and I own a Poppy doll. I just can’t help myself—she is just so darn cute!! Who can resist that cute pink face and all that soft pink hair?? Okay, most people can. I clearly have a “Trolls” addiction problem. I’m just a sucker for cute, pink things that make me happy.
Speaking of pink things that make me happy, this recipe is exactly that! Inspired by the movie “Trolls” comes my Strawberry Basil Smoothie! It’s pink like Poppy and guaranteed to make even the gloomiest day, a happy one without having to ingest any trolls. It’s a win-win!
My Strawberry Basil Smoothie is creamy, refreshing, and delicious! It’s vegan (unless you choose to use regular milk instead of almond milk) and gluten-free. Strawberry and basil are truly a magical combination. They play off each other perfectly giving this smoothie a new dimension you don’t get from a regular fruit drink. I love pairing fruit with herbs—it just brings it to a new level. This smoothie also gets an extra protein and nutrient boost from chia seeds. Chia seeds are one of my favorite smoothie boosters because they’re so good for you and help to thicken the drink without any yogurt. I like to use Spectrum Essentials Chia Seeds because I think they have the cleanest taste. Just another reason to be happy about this recipe: health and taste, all in one! Please note: the chia seeds are optional, so if you don’t like or can’t find them, you are more than welcome to make this smoothie without them!
Also, for a variation, you can try this smoothie with blueberries instead of strawberries! Blueberries and basil also go super well together. AND, in case you were worried, your blue smoothie will still be “Trolls” inspired because the other main troll in the movie, Branch (Poppy’s bae, played by Justin Timberlake) is blue! So, there we go.
This smoothie is tasty, healthy, and Poppy (and Branch) approved! This delicious drink is the happiest thing that’s happened in my life since “Trolls” first came out—that is, until, they decide to make a Trolls 2 (fingers crossed!) - 1 cup frozen strawberries
- 1¼ cup almond milk (or any other milk)
- 2 teaspoons chia seeds
- 3 large basil leaves
- Add all ingredients into a blender. Blend until smooth. Enjoy cold!
